I like to cook... a lot. But in the chaos and flurrying activities of every day, coming home from work to "starving" kids, there is not always time to explore and enjoy cooking much. I do get the passion over me, though, once in a while, and today was one of those days. I loooove seafood! I know I have mentioned it before, but it goes so above and beyond any other food groups for me! So, I am always on the lookout for great recipes to try out that involves seafood.
Today, I found a recipe called "Scampi on coconut rice":
500 gram scampi
3 dl rice
1 yellow onion
1-2 fennel bulbs (depending on size)
1-2 red chilis (depends on how spicy you want it! I used 2)
1 can of coconut milk
2 or more cloves of garlic (I almost always use more than most recipes calls for, love it!)
1 pinch of cayenne pepper
3 tbs olive oil
Defrost and rinse the scampi. Cook up the rice with a bit of salt and olive oil. Put salt, pepper and some olive oil on the scampi and cook them for a few minutes only in a hot pan or grill pan (I actually put olive oil, salt, pepper, garlic in a bowl and soaked the scampi in that mixture for a few hours before cool\king, but you don't have to). Dice the fennel and onion into small cubes, finely chop the garlic and chili. Fry it all in a pan with some olive oil for about 10 minutes. turn the heat on the stove top yup a bit, pour the coconut milk and rice into the mixture of vegetables, mix it all together and taste and adjust it all with freshly squeezed lime juice, salt and cayenne pepper. Plate up the rice mixture, and put the scampi on top. Serve!
This wills serve 3-4, depending on their appetite! :)
